Tried new recipe for stripper. Mix couple cups brown sugar wih teaspoon Kosher salt depending on # of filets you may need to adjust salt and sugar. In a shallow glass pan cover filets completly both sides set in fridg. for about 5 or 6 hrs. preheat smoker 200 deg. smoke at 200 for about 2hrs depend on thickness the last 15 mins cover with apicot preserves. Serve over wild rice
